Welcome to Spice Garden Indian Cuisine! There is a moment that happens at almost every table in our Tucson restaurant β the moment a basket of freshly baked Garlic Naan arrives from the tandoor oven. Warm, blistered, fragrant with roasted garlic and fresh herbs, and impossibly soft inside β the reaction is always the same. Eyes light up. Hands reach immediately. And the basket is empty long before anyone expected it to be.
Today, we are celebrating the most beloved bread in Indian cuisine. Here is everything you need to know about Naan β its origins, the different types, how ours is made, and why the version that comes out of a real clay tandoor oven is in a completely different league from anything you find in a grocery store.
What Is Naan?
Naan is a leavened, oven-baked Indian flatbread made from a simple dough of all-purpose flour, yogurt, yeast (or baking powder), salt, and a small amount of oil or ghee. The yogurt is the key ingredient that gives Naan its distinctive soft, slightly tangy interior and helps it achieve the characteristic charred blisters on the exterior when it meets the intense heat of a tandoor oven.
The word “Naan” comes from the Persian word for bread, and the flatbread has been a staple of Central Asian and North Indian cooking for many centuries. Today, it is arguably the most internationally recognized Indian bread β and at Spice Garden, every single piece is made fresh to order in our traditional clay tandoor oven.
Tandoor-Baked vs. Store-Bought: Why It Matters
If your only experience of Naan is the packaged version from a grocery store, you are in for a revelation. The difference between a store-bought Naan and one pulled fresh from a 900Β°F clay tandoor oven is not small β it is categorical.
In a traditional tandoor, raw Naan dough is slapped directly against the scorching clay walls of the oven. The extreme heat causes the bread to puff dramatically, blister, and char in seconds β creating a texture and flavor that is impossible to replicate on a stovetop or in a conventional oven. The exterior is slightly crispy in places with beautiful char marks; the interior is incredibly soft, chewy, and perfectly cooked through. And the faint smoky aroma from the clay walls adds one more irreplaceable dimension of flavor.
This is what Naan was always meant to be. This is what we serve at Spice Garden.
All the Naan Varieties at Spice Garden
π« Plain Naan
The classic, unfussy version. Just beautifully baked dough from the tandoor β soft, slightly chewy, with a perfectly blistered surface. Plain Naan lets the curry do all the talking, making it a versatile pairing for every dish on our menu. Vegetarian β
π§ Butter Naan
Plain Naan elevated with a generous finish of melted butter brushed directly onto the hot surface as it comes out of the oven. The butter soaks into the warm bread immediately, creating a rich, glossy, indulgent flatbread that is deeply satisfying alongside any curry. The most popular bread choice for first-time visitors after Garlic Naan. Vegetarian β
π§ Garlic Naan β The Fan Favorite
The undisputed champion of the Spice Garden bread basket. Our Garlic Naan is topped with freshly roasted garlic, chopped cilantro, and finished with a brush of melted butter β creating a bread that is simultaneously crispy, fragrant, herbaceous, and rich. Every single bite is a complete sensory experience.
Garlic Naan pairs with literally every dish on our menu, from the mildest Butter Chicken to the fiercest Vindaloo. It is the bread that disappears first at every table, every time. Our honest advice: always order one more than you think you need. Vegetarian β

Rich, satisfying, and a wonderful way to experience a more complete flavor profile from your bread course alone. Ask your server about today’s stuffing preparation. Vegetarian β
The Best Naan Pairings at Spice Garden
While Naan pairs beautifully with every dish we serve, here are the combinations our team personally loves most:
- Garlic Naan + Butter Chicken β The classic pairing that has converted thousands of people to Indian food. The garlic and herbs in the naan perfectly complement the creamy tomato sauce.
- Butter Naan + Saag Paneer β The rich buttery bread is a wonderful match for the earthy, green depth of spinach curry.
- Plain Naan + Dal Tadka β The simplicity of plain naan lets the comforting, earthy lentil curry take center stage.
- Stuffed Naan + Vegetable Raita β A hearty vegetarian combination that is surprisingly complete as a light meal on its own.
- Garlic Naan + Chicken Vindaloo β The crispy naan provides a starchy buffer against the Vindaloo’s fire while soaking up all that magnificent, tangy sauce.
Is Naan Vegetarian? What About Gluten-Free?
All Naan varieties at Spice Garden are fully vegetarian. However, Naan is made from wheat flour and is therefore not suitable for guests with celiac disease or gluten sensitivity. For gluten-free guests, we recommend our excellent rice-based alternatives β Basmati Rice, Dosas, and Idlis are all naturally gluten-free and make wonderful accompaniments to our curries.
β οΈ Allergen Warning: Naan contains wheat (gluten) and dairy. It is not suitable for guests with celiac disease or gluten intolerance. Our kitchen also handles nuts (Cashews, Peanuts) and soy. Please inform our staff of any allergies before ordering.
